The Greek Super League club already has three Argentines in Juan Manuel Garcia, Maximiliano Gabriel Comba and Facundo Daniel Bertoglio, who were signed at the beginning of last season.
There is also Spanish influence on the bench, which will allow for Mendieta to fit in easy as a Spanish speaker.
Volos are keen to pay a transfer for the 31-year-old, who has only spent a season at Sundowns.
Mendieta joined The Brazilians from Stellenbosch FC after a productive season of 19 goal contributions (10 goals and nine assists) in 31 appearances in the 2022/23 season in what was a standout campaign for him.
The Argentine has spent three years in the Cape Winelands.
