PSG manager Thomas Tuchel made four changes, as goalkeeper Keylor Navas returned while the suspension of Neymar and Marco Verratti saw Pablo Sarabia and Idrissa Gueye being recalled alongside a rare start for Tanguy Kouassi.
Sarabia gave the Parisians a bright start with the opener in the third minute after diverting Marquinho's mishit shot past Dijon shot-stopper Runar Alex Runarsson.
Tuchel was forced to make an early substitution in the 17th minute after Angel Di Maria went down with a hamstring injury and he was replaced by Julian Draxler.
PSG were in complete control and they should have been 2-0 up with seven minutes left of the first stanza after Mbappe did all the work to loft a pass on the path of Edinson Cavani but the Uruguayan horribly struck his shot over the bar from five-yards out with the net open.
Mbappe also had a glorious chance to double the hosts' lead five minutes from the break after going clear on goal but his strike was kept out by the trailing leg of Runarsson, in a one-on-one situation.
Tuchel's men were on the front foot from the break and Cavani had another great chance to make it 2-0 on the hour-mark after a flick on by Mbappe set him up clear on goal but he lifted his effort over the bar.
PSG were creating chances and Sarabia was the latest player to spurn an opportunity in the last 20 minutes after getting on the end of a good build-up but his side-footed strike came off the outside of the post.
Mbappe finally settled the nerves for PSG with the second goal 15 minutes before time after he went clear from Draxler's through ball, rounded Runarsson and slotted the ball to the back of an empty net.
Second-half substitute Mauro Icardi made it 3-0 for the hosts just a minute later, a few minutes after coming on with a strike past the helpless Runarsson, following a through ball from Mbapppe.
Mbappe bagged the fourth goal for PSG in stoppage time with a shot from close range on a rebound from Draxler's blocked shot to complete his brace as the Parisians went 13 points clear at the top of the log.
